Looking for a time-saving hack? We love this meal-prep hack from @diliciouslyinspired who shows us how easy it is to make American-style pancakes (these are made with gluten-free flour) in advance and cook from frozen. Her recipe uses:
- 4 eggs
- 1/2 cup milk of choice
- 2 tsp vanilla extract
- 4 tbsp pure maple syrup
- 2 tbsp baking powder
- Pinch of salt
- 1.5 cups of GF flour
Pour the batter into an ice cube tray (use one of those jumbo ones with a lid, like this from Amazon, £10.59), garnish with your favourite toppings (blueberries, chocolate chips etc) and pop it in the freezer. When you’re ready to cook your pancakes, pop them out of the ice cube tray and fry (on low heat) from frozen – it really is that easy.

What you will need:
For the coffee syrup:
- double espresso
- 2 tbsp marsala wine
- 2 tbsp sugar
For the batter:
- 100g plain flour
- 300ml milk
- 2 eggs
For the filling:
- 350g mascarpone
- 2 egg yolks
- 300ml double cream
- 75g of sugar
Once you have made Seema’s simple crêpe batter, start making the filling. Whip the ingredients together to create the sweet tiramisu cream. Pour your batter into a frying pan and distribute evenly to create a very thin crêpe. Once evenly cooked on both sides quickly dip into the coffee syrup and dollop on as much of the cream filling as your heart desires.

- 180ml plant-based yoghurt (Selma used soy)

The hashtag #soufflepancake has 880.2 million views on TikTok and it seems the whole world has gone crazy for this Japanese delight. Soufflé pancakes are much lighter than the well-known American pancake, as they contain less flour and incorporate beaten egg whites with sugar (i.e. meringue). This creates the height and fluffiness of these pancakes.
You will need:
- 3 eggs (separated into yolks and whites)
- 3.5 tbsp milk
- 3 tbsp flour
- 2 tbsp sugar
Separate your eggs into two bowls (yollks and whites). Mix the egg yolks with the milk. Once combined, sift the flour into this mixture, stir and set aside. In the other bowl, add the sugar to the egg whites and beat with a whisk until stiff peaks form into a meringue. Fold the meringue into the rest of the batter. Cook on low heat, splash the pan with some water cover it with a lid.
Cook each side for 3-4 minutes and wait to see the jiggle appear. Add your favourite toppings and enjoy.

Don’t have a sweet tooth? We’ve found the cheesiest most delicious recipe for any mealtime and you’ll likely have all these ingredients in the house. Not strictly a pancake, but a potato cake filled with cheese created by food influencer @jasmineandtea.
You’ll need:
- 1 russet potato (400g)
- salt
- 1 tbsp granulated sugar, add more depending on taste
- 1/4 cup (34g) cornstarch
- mozzarella cheese (small cubes or shredded)
- oil for frying
Dice your potato into cubes and boil in salted water. Mash the potatoes with sugar (optional) and cornflour. Separate this mixture into five balls (or 10 smaller ones), flatten each ball and add some mozzarella cheese in the middle and close it back up into a ball again (this allows the cheese to stay inside). Add your potato-cheese balls into a hot, well-oiled pan and fry – cook on each side for 5 minutes until golden brown. Wait for them to cool down and enjoy this savoury treat – alone or with friends.
