The one you can make in advance: Freezer pancakes

Looking for a time-saving hack? We love this meal-prep hack from @diliciouslyinspired who shows us how easy it is to make American-style pancakes (these are made with gluten-free flour) in advance and cook from frozen. Her recipe uses:

  • 4 eggs 
  • 1/2 cup milk of choice
  • 2 tsp vanilla extract
  • 4 tbsp pure maple syrup
  • 2 tbsp baking powder
  • Pinch of salt
  • 1.5 cups of GF flour

Pour the batter into an ice cube tray (use one of those jumbo ones with a lid, like this from Amazon, £10.59), garnish with your favourite toppings (blueberries, chocolate chips etc) and pop it in the freezer. When you’re ready to cook your pancakes, pop them out of the ice cube tray and fry (on low heat) from frozen – it really is that easy. 

The dessert one: Tiramisu Crêpes

Food content creator @seemagetsbaked is our go-to for delicious recipe inspo and once again she hasn’t let us down with this dessert pancake recipe. Create this French and Italian hybrid dessert at home to wow your friends and family.

What you will need:
For the coffee syrup:

  • double espresso
  • 2 tbsp marsala wine
  • 2 tbsp sugar

For the batter:

  • 100g plain flour
  • 300ml milk
  • 2 eggs

For the filling:

  • 350g mascarpone
  • 2 egg yolks
  • 300ml double cream
  • 75g of sugar

Once you have made Seema’s simple crêpe batter, start making the filling. Whip the ingredients together to create the sweet tiramisu cream. Pour your batter into a frying pan and distribute evenly to create a very thin crêpe. Once evenly cooked on both sides quickly dip  into the coffee syrup and dollop on as much of the cream filling as your heart desires.

This flavourful concoction is not one to sleep on.

You will need:

  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • 3 tbsp cane sugar
  • 1/2 tsp sea salt
  • 10 tbsp unsweetened shredded coconut
  • 2 bananas, medium-sized, diced
  • 2 eggs
  • 1 cup coconut water
  • 1 cup coconut milk
  • 3/4 cup whole milk
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil, melted
  • 2 tbsp unsalted butter, melted (and more butter for frying)
  • Extra virgin olive oil spray, for frying

The intolerance-friendly one: gluten and dairy-free pancakes

Content creator and gluten-free IBS sufferer @fitfoodieselma has created the fluffiest gluten and dairy-free pancake recipe we have ever seen. This recipe uses:

  • 1 egg
  • 180ml plant-based yoghurt (Selma used soy)
  • 1 tbsp maple syrup (or coconut sugar/brown sugar)
  • 1 tsp vanilla extract,
  • 120 -180ml gluten-free flour mix (depending on how thick you want it)
  • 1.5 tsp baking powder. 

Add whichever toppings you see fit to enjoy this gluten and dairy-free treat without any potential tummy aches - unless you eat the whole batch!

The fluffiest one: Japanese soufflé pancakes

The hashtag #soufflepancake has 880.2 million views on TikTok and it seems the whole world has gone crazy for this Japanese delight. Soufflé pancakes are much lighter than the well-known American pancake, as they contain less flour and incorporate beaten egg whites with sugar (i.e. meringue). This creates the height and fluffiness of these pancakes.

You will need:

  • 3 eggs (separated into yolks and whites)
  • 3.5 tbsp milk
  • 3 tbsp flour
  • 2 tbsp sugar

Separate your eggs into two bowls (yollks and whites). Mix the egg yolks with the milk. Once combined, sift the flour into this mixture, stir and set aside. In the other bowl, add the sugar to the egg whites and beat with a whisk until stiff peaks form into a meringue. Fold the meringue into the rest of the batter. Cook on low heat, splash the pan with some water cover it with a lid.

Cook each side for 3-4 minutes and wait to see the jiggle appear. Add your favourite toppings and enjoy.

The savoury one: cheese potato heaven pancake

Don’t have a sweet tooth? We’ve found the cheesiest most delicious recipe for any mealtime and you’ll likely have all these ingredients in the house. Not strictly a pancake, but a potato cake filled with cheese created by food influencer @jasmineandtea.

You’ll need:

  • 1 russet potato (400g)
  • salt
  • 1 tbsp granulated sugar, add more depending on taste
  • 1/4 cup (34g) cornstarch
  • mozzarella cheese (small cubes or shredded) 
  • oil for frying

Dice your potato into cubes and boil in salted water. Mash the potatoes with sugar (optional) and cornflour. Separate this mixture into five balls (or 10 smaller ones), flatten each ball and add some mozzarella cheese in the middle and close it back up into a ball again (this allows the cheese to stay inside). Add your potato-cheese balls into a hot, well-oiled pan and fry – cook on each side for 5 minutes until golden brown. Wait for them to cool down and enjoy this savoury treat – alone or with friends.

The one for gym fiends: protein-packed pancakes

If you're a fan of Joe Wicks' Lean in 15 Protein Pancakes, then you'll love this protein-packed recipe perfected by online fitness coach @ellena_fit. It has more than 30 grams of protein plus the treat of crushed biscuits on top. You'll need:

  • 1 egg 
  • half a banana (mashed)
  • 30 grams of oats
  • Pinch each of baking powder, ginger, and cinnamon
  • 1 scoop of vanilla protein
  • 50ml of milk 

Add to a blender and blitz. Once fried top with fat-free yoghurt, sugar-free syrup and crushed biscuits.
