If you’re searching for the best pancake recipes this Pancake Day 2026 (Shrove Tuesday is on 17 February by the way) then look no further as we have scoured TikTok for the best of the best. We’re talking fluffy soufflé style pancakes, the viral cottage cheese pancakes (honestly, they’re delicious) as well as gluten-free versions and The Rock’s favourite pancake recipe.
You’ll need a non-stick pan, a spatula and some arm power to do the customary Pancake Day flip!
1. Spaghetti pancakes

You can also sweeten the mix with maple, honey or sweetener of choice.
Method:
Prepare your usual pancake mixture and whisk until smooth. Add it to a squeeze bottle or piping bag. If you don’t have one, use a ziplock bag and cut a hole in the corner.
Heat a non-stick pan on low to medium heat. Create a spiral or zig-zag in the pan using your batter. Cook until lightly golden underneath, then carefully flip and cook the other side.

Pulse your pancake mixture in a blender until everything is combined, but it’s still thick.

For the pancakes:

For the cinnamon sugar:

60g butter (softened)

50g caster sugar

1 tbsp of pancake batter
For the icing:

240g icing sugar

1 tbsp milk
Method:
Whisk the egg until it becomes lighter in colour, add in the melted butter and milk and mix until everything is combined. Add the dry ingredients and whisk until the batter is relatively smooth, and no large clumps remain. Set the batter aside.
Make the cinnamon sugar mixture by combining the butter, sugar and cinnamon. Add in 1 tbsp of the pancake batter, then mix everything until smooth and pour into a piping bag.
Make the icing by whisking together icing sugar and milk until smooth.
Heat up a pan with a small amount of butter on medium heat. Once the butter is melted, scoop your batter onto the pan. Immediately swirl the cinnamon sugar mix over the pancakes and let it cook until small bubbles start to form, about 1–2 minutes. Then add a small tsp of water to the edge of the pan, and immediately put the lid on the pan and let it cook for another 2 minutes. I’ve found that flipping the pancake can ruin the swirl design, so using this steaming method helps cook the pancakes thoroughly without needing to flip.
Stack the pancakes, top with a generous drizzle of the icing, and enjoy.

Soufflé pancakes are much lighter than American pancakes, as they contain less flour and incorporate beaten egg whites with sugar (ie meringue). Ingredients for approx 3 pancakes:
- 2 eggs (separated into yolks and whites)
- 2 tbsp milk
- 1/2 tsp vanilla extract
- 1 tsp lemon zest (optional)
- 30g cup flour
- 1/4 tsp baking powder
- 1/2 tsp white vinegar (or lemon juice)
- 2 tbsp granulated sugar
Method:
Separate your eggs into two bowls (yollks and whites). Mix the egg yolks with the milk, vanilla and lemon zest and whick until combined. Sift the flour and baking powder into this mixture, stir and set aside. In the other bowl, add the vinegar or lemon juice then gradually add the sugar to the egg whites and beat with a whisk until stiff peaks form into a meringue. Add 1/3 of the egg whites to the egg yolk batter and fold in. Then fold the remaining meringue batter into the rest of the batter. Cook on low heat, splash the pan with some water cover it with a lid.
Cook each side for 3-4 minutes and wait to see the jiggle appear. Add your favourite toppings and enjoy.

9. Savoury pancakes
Don’t have a sweet tooth? We’ve found the cheesiest recipe for any mealtime and you’ll likely have all these ingredients in the house. Not strictly a pancake, but a potato cake filled with cheese created by food influencer @jasmineandtea.

Ingredients for 4 pancakes:
- 1 russet potato (400g)
- salt
- 1 tbsp granulated sugar, add more depending on taste or leave out entirely
- 30g cornstarch
- mozzarella cheese (small cubes or shredded)
- oil for frying
Method:
Dice your potato into cubes and boil in salted water. Mash the potatoes with sugar (optional) and cornflour. Separate this mixture into five balls (or 10 smaller ones), flatten each ball and add some mozzarella cheese in the middle and close it back up into a ball again (this allows the cheese to stay inside). Add your potato-cheese balls into a hot, well-oiled pan and fry – cook on each side for 5 minutes until golden brown. Wait for them to cool down and enjoy this savoury treat – alone or with friends.

Dwayne ‘The Rock’ Johnson’s eating habits are the subject of endless interest. Ingredients for approx 8 pancakes:
- 240g all-purpose flour
- 3 tsp baking powder
- 3 tbsp cane sugar
- 1/2 tsp sea salt
- 10 tbsp unsweetened shredded coconut
- 2 bananas, medium-sized, diced
- 2 eggs
- 250ml coconut water
- 250ml coconut milk
- 185ml cup whole milk
- 1 tsp vanilla extract
- 2 tbsp coconut oil, melted
- 2 tbsp unsalted butter, melted (and more butter for frying)
- Extra virgin olive oil spray, for frying
Method:
Sift the flour, baking powder, shredded coconut, sugar and salt in a bowl. In a separate bowl combine the wet ingredients: milk, coconut milk, coconut oil, coconut water, vanilla, eggs, melted butter and mix. Pour the wet ingredients into the dry ingredients and add the chopped bananas. Melt some butter into a pan and ladle the mixture in. Cook for a few minutes each side and then drizzle with peanut butter, maple syrup and some more chopped banana for pancakes The Rock style.
